Terroir Notes: This wine highlights Chavot's terroir. The grapes are sourced from 2 parcels in Chavot. The Chardonnay is from Les Chemins d'Epernay with clay soil and chalky subsoil. The Chardonnay was planted in 1957. The Pinot Noir is from Les Rouges Maisons with clay, flint and schist soils. The Pinot Noir was planted in 1983. The vines are farmed biodynamically.
Winemaking Notes: The grapes are manually harvested when fully ripe. A traditional press is used to gently press the grapes. Alcohol fermentation occurs in barrels. Malolactic fermenation does not occur. The wines ages for 6 months on the lees. Wine is disgorged by hand. Dosage is 3 g/L.
Tasting Notes: "Very focused indeed; presumably because there is no malo and the Pinot is grown on limestone. Very marked acidity and crystalline structure. Super fresh and racy – a sort of Saar style of champagne!" - Jancis Robinson

"The 2013 Extra Brut Les Empreintes is a wine of extraordinary beauty. Vivid and precise, the 2013 is just so expressive today. The blend of Chardonnay and Pinot Noir works beautifully here. Like so many of the wines in this tasting, the Empreintes stands out for its racy aromatic profile and total sense of finesse. Time in the glass brings out the power and resonance of Pinot Noir. The 2013 is equal parts Chardonnay and Pinot Noir, both from vineyards in Chavot. Dosage: 4 gr/L. Disgorged: February, 2019."
