Tasting Notes: RBL is a subtle sparkling wine that tastes of mineral rocks under a veil of fresh snow.

Winemaking Notes: RBL’s bubbling technique differs from the traditional sparkling processes. Both the Champenoise and the Charmat methods start with a finished wine. That finished wine is inoculated by a mixture of yeast and sugar to start the secondary fermentation in order to produce the CO2, which forms the bubbles. The only difference between the two methods under this aspect is that the secondary fermentation takes place in the bottle for Champenoise and takes place in a pressurized vat for Charmat.

i Clivi's starting point is different: it is a must and not a finished wine. The bubbles are made by retaining the CO2 in the fermenting must during the final stages of its fermentation. Similar to the ancestral method, there is no secondary fermentation and therefore no addition of sugar and yeast, which also ultimately means no addition of alcohol (usually at least one degree). i Clivi presses the Ribolla grapes and transfers the must to an open vat for fermentation. Towards the end of the fermentation, when the residual sugar is around 25 grams per liter, the vat is closed to trap the CO2 released by the fermentation. This differs from the ancestral method, which finishes fermentation in the bottle. RBL is then left in the same vat to mature on its lees until bottled under pressure. Sparkling wine made in this manner has fresh and forthcoming aromas and fruit flavors.
