Winemaking Notes: Grapes from sites throughout Paso Robles were harvested at optimal maturity for this 2017 Cabernet Sauvignon. The fruit was destemmed and gently crushed into closed-top stainless steel fermenters at warm temperatures to fully extract color and flavor. The fermented wine was then racked to oak for aging. The wine lots were tasted throughout the aging process and blended back together just before bottling.
Tasting Notes: This Paso Robles Cabernet Sauvignon is ruby in color and displays aromas of black cherry, plum, and violets. Ripe berry flavors, combined with hints of savory spices, coat the palate. Soft tannins and sweet oak linger on a long and balanced finish.
