Winemaking Notes: After crushing, the juice spends at least two weeks macerating on its skins. Fermentation occurs in small stainless steel vats at low temperatures. Two rackings are done early in the fermentation process to remove the heavy deposits. A third is done after three weeks. This wine is then left on the fine lees in stainless steel for one year before being bottled without fining or filtration. The result is a voluptuous and complex orange wine.
Tasting Notes: Santa Chiara bursts with aromas of sweet, ripe tropical and citrus fruits. This wine is explosive on the nose. Surprisingly dry, it has vibrant acidity on the palate. Concentrated, earthy and mineral-laden flavors persist long after the sip is over. This is a magical wine that will pair with many different fare.
