Winemaking Notes: The estate grapes were sourced from two gentle hills exposed east to west. The grapes were pressed after a short maceration and fermented in stainless steel tanks for about 15 days. Malolactic fermentation did not occur. The wine aged for 6 months in stainless steel and a minimum of 2 months in bottle before release.
Pairing Suggestions: The Aurora Rosato will pair great with light fish and pasta dishes. Feel free to enjoy it without food as well.
Tasting Notes: The nose has light aromas of watermelon, violet, strawberry, and basil. The mouth is juicy and fresh with bright fruit flavors. The fruit is nicely balanced with acidity and minerality. This is an excellent, dry Nebbiolo rosé.

"Knockout aromas of crushed red fruits, peony and violet. Creamy, dense and layered but youthful and lively, offering sappy flavors of blueberry, violet, and a saline minerality. Finishes long and clean, with a savory element lingering nicely. A very precise, serious rosato. In fact, this is one of the best rosato I have tasted this year. Great stuff."

"Saline nuances complicate the otherwise simple but well-balanced floral and sweet red fruit aromas and flavors. Closes medium-long and fresh. Easygoing and offering early appeal, this rosato could use more complexity for a higher score."
