Climate: The summers can be hot and dry at the eastern end of Touraine. The rainfall is evenly spread through the year.
Winemaking Notes: The vines are grown organically. The soils are worked mechanically and grass is allowed to grow between the vines. The grapes are harvested at optimal maturity, the objective is to achieve perfect balance in the fruit. Grapes are hand-sorted before pressing and fermented in thermo-regulated stainless steel tanks. The wine matures on the lees in ordered give them additional richness. Bottling occurs in the spring following the harvest to preserve freshness and fruit.
Tasting Notes: The nose is very expressive with vibrant aromas of citrus fruit and hints of more exotic fruit. The mouthfeel is richly textured and full, pretty exceptional for a Sauvignon Blanc. Bags of personality, the wine has character enough to accompany grilled fish or cold cuts. It will awaken and stimulate the taste buds.
