Wine Notes: The vineyards for this lovely red are at the base of the hillside vineyards of the estate in the village of Sainte Croix du Mont and are composed of limestone and clay. The grape varieties are Merlot and Cabernet Sauvignon, and the average age of the vines is 30 years. The wine ferments with native yeast and ages in temperature-controlled vats. Malolactic fermentation occurs in tank. The wine matures in stainless steel and about 10% in oak barrel. It is bottled after 18 months.
Filtration and Fining: They use vegetable fining agents (green peas, potatoes). Tangential filtration occurs after the harvest and plate filtration occurs before bottling.
Sulfites Addition : Total SO2 is around 22mg/l at release.
