Vineyard Notes: The vineyards are located within the Penedés DO in northeastern Spain, which is a few miles south of Barcelona in the Alt Penedés subregion at an elevation of 1,312 feet. The high elevation allows the grapes to retain natural acidity, which results in wines that are zesty and fresh with expressive aromas.
Winemaking Notes: Each grape variety is harvested, crushed and fermented separately in stainless steel tanks. Second fermentation occurs in the bottle typical of the champagne method. The wine ages for 18 months on its lees. Disgorgement is followed by dosage.
Pairing Notes: Cavas are very versatile; drink before, during, or after your meal.
