Winemaking Notes: This sparkling wine is 100% Chardonnay from the Chêne la Butte vineyard in the premier cru village Cumières. The wine fermented with native yeast in 80% concrete eggs and 20% stainless steel. Malolactic fermentation occurred naturally. The wine was not fined or filtered. The wine aged for four years on the lees in bottle. For this cuvée, the bottles are stored with natural cork instead of crown cap, thus enabling a more intensive approach. There was zero dosage.
Tasting Notes: This is not your classic blanc de blancs style of Champagne. Being a single vineyard Champagne, you can feel the weight and texture of this wonderful vineyard. The taste of the soil that the grapes were grown in are very evident. It is delicate with subtle citrus notes, soft subtle vanilla and white blossom aromatics. This is a wonderful expression of terroir. The fact that it is zero dosage means that this wine delivers a clean, direct and refreshing style of Chardonnay.
