Winemaking Notes: Grapes were gently crushed and dropped by gravity into 1.5 ton bins. Cold soaking lasted between 24 and 72 hours. The grapes were then inoculated with a variety of yeast, punched down by hand, and pressed directly to barrel where the wine finishes both primary and secondary fermentation. The barrels were 100% French oak, 65% new and 35% second and third use. The wine aged for 22 months. The individual lots of wine that compose the Cabernet Sauvignon were kept separate for at least one year before they are blended.

Tasting Notes: The Tamarack Cabernet is a full-bodied wine. Black currant jam, honey glazed dates and black peppered seasoned T-bone steak aromas intertwine with piercing boysenberry, rosemary rack of lamb, balsamic, blue cheese, and bacon wrapped figs. Intriguing tannins extend out over an intricate and balanced finish.

    The 2014 Cabernet Sauvignon offers more depth and richness as well as notes of tobacco leaf, black currants, charred earth and chocolate. With medium-bodied richness, sweet tannin and good acidity, it's another solid effort from this estate to drink over the coming 6-7 years.

    The 2014 Cabernet Sauvignon is a deeply colored effort that has an upfront, voluptuous style in its blackcurrant and plum fruits, spice, and chocolate aromas and flavors. With medium to full-bodied richness, ripe tannin, and a ready to go style, it's another high-quality wine from this estate to drink over the coming 5-7 years.
