Nihonkai Shuzo faces the Japan Sea in Shimane Prefecture; accordingly, their sakes feature a subtle saline component which tends to complement the fresh seafood. The +15 Ultra Dry is brewed at low temperatures using rice sourced from Shimane and Mitsumi groundwater.
Tasting Notes: Initially bold and full-bodied, this is a rice-forward sake. Typical of cask-strength (genshu) sake, there is a sharp pre-finish bite to the palate. The character of this sake completely changes at room temperature.
