Vineyard Notes: Blanc de Blancs is a sparkling wine marked by the typicity of its place of origin, the Vinya del Llac, which is a vineyard over 40 years old that produces a structured, fresh and complex wine. The Vinya del Llac faces north. The clay soils release water slowly throughout the vegetative cycle and, deep beneath the surface, calcareous bedrock with encrusted pebbles limits the water reserves. This particular soil composition gives the grapes more structure. The lake near the vineyard moderates the climatic conditions, avoids heatwaves and favors long ripening.

Winemaking Notes: Slowly, with low pressure, the grapes are pressed. The primary fermentation occurs in stainless steel vats at a controlled temperature. Each variety and soil type is fermented separately. The wines are blended for second fermentation in bottle. Dosage does not occur. Blanc de Blancs is aged for a minimum of three years. The disgorgement date is listed on the back label.

    The 2015 Blanc de Blancs, the wine that replaced the old L'Hereu, was produced with fruit from different organic and biodynamic plots within their 60 hectares of vineyards and some purchased grapes. The blend of 42% Xarello, 38% Macabeo and 20% Parellada fermented with indigenous yeasts in stainless steel and was put to re-ferment in bottle with Champagne yeasts for no less than 18 months. The soils are rich in limestone and marine fossils, but the vineyards used for this wine have some more clay, and the wines have more volume and fruit, yet the wine is very clean, fresh and tasty with what, for Pepe Raventós, is the salty minerality of this small region within Penedès. This is approachable and delicious, super tasty and balanced, from a typical-climate vintage.
