Tasting Notes: The white from Simone is a truly unique creation based primarily on Clairette that is supplemented with Grenache Blanc, Bourboulenc, Ugni Blanc and a touch of Muscat Blanc. Brisk in its youth animated by a bouquet of pine-resin, Simone Palette Blanc evolves slowly into a sensual masterpiece with its lingering finish built on a mass of minerality. This is a remarkably age-worthy wine with the potential to give pleasure over a span of two decades or more.
Vineyard Information: Vines are more than 50 years old with some plots more than 100 years old. Harvest is done exclusively by hand. The vineyards are north-facing, a physical element that provides freshness to the wine rather than the candied, alcoholic fruit of so many of the white wines (and reds) of the south.
Winemaking Notes: Fermentation begins naturally, without the addition of any outside yeasts, and takes place in large, old foudres. The wine ages for one year in the 20-30 hL casks with some time on its lees. Then it ages for one additional year in small barrels before a final assemblage and bottling. Jean-Francois believes that obvious oak unnecessarily masks Chateau Simone’s unique terroir, so he limits its use severely, and the resulting wine shows not a trace of vanilla or oak tannin. Malolactic fermentation is not purposefully blocked; it simply never occurs.
