Vineyard Notes: The Xarel-lo comes from the Mas del Serral vineyard. It was planted in 1970. The soils are deep with a higher proportion of clay above the limestone.
Vintage Notes: The winter was dry and very warm, causing an advanced budding of the strain. Spring was warm and very dry. A vegetative cycle with little water produced a greater concentration in the grapes and a drop in production. Sporadic rainfall in July and at the beginning of August favored a good ripening of the grapes. The harvest was not particularly productive but of good quality and high acidity.
Winemaking Notes: The grapes were carefully selected in the vineyard via manual harvest. The grapes were taken straight to the press. Whole bunches were pressed to avoid oxidation as much as possible during pressing and to obtain the best quality must. No additives including sulfites were added. Wild yeast from the vineyard started fermentation. A starter culture (pieds de cuve) was not used. The wine was not racked in tank. The fermentation process was slow. It finished with a lot of residual sugar (15.9g/L), which is when Pepe decided to bottle the wine as a sparkling wine so it could continue to ferment in the bottle. The wine is a sparkling wine made using the Ancestral Method, with around 3 bars of atmospheric pressure.
