Growing up close to nature with their parents keeping beehives, a biodynamic garden and a few vines in the garden, Valérie and Fabrice immediately began converting the domaine to biodynamic viticulture. They are seeking the best and purest grapes possible for their wines. Soil is worked by the row with every other row grassed over. Vineyard is protected with tisanes, essential oils, biodynamic preparations and reduced doses of sulfur and copper. They employ hard harvesting with selections guided by maturity and product objective. Sulfur is applied at harvest, then strictly limited or absent during vinification. A special 'local' treatment is applied to part of the harvest. The wines are aged under a veil. After classic alcoholic and malolactic fermentations (with natural yeast), there is a third phase: the wines are aged under a veil of yeast, giving a pronounced walnut flavor! WINES: |
