Let's Talk Jura's Champ Divin

Growing up close to nature with their parents keeping beehives, a biodynamic garden and a few vines in the garden, Valérie and Fabrice immediately began converting the domaine to biodynamic viticulture. They are seeking the best and purest grapes possible for their wines. Soil is worked by the row with every other row grassed over. Vineyard is protected with tisanes, essential oils, biodynamic preparations and reduced doses of sulfur and copper. They employ hard harvesting with selections guided by maturity and product objective. Sulfur is applied at harvest, then strictly limited or absent during vinification. A special 'local' treatment is applied to part of the harvest. The wines are aged under a veil. After classic alcoholic and malolactic fermentations (with natural yeast), there is a third phase: the wines are aged under a veil of yeast, giving a pronounced walnut flavor!

Champ Divin 2009 Champ D'Etoiles, Cremant du Jura

This has many characteristics of fine Champagne, but is also quite clearly from the Jura. No dosage, it has notes of pear and citrus with fine and beautifully correct structure.

Champ Divin 2011 Chardonnay
Charming aromas of pineapple and white peach. Fresh flavors upheld by a dashing, fine and beautifully correct structure. An explosion of white, flesh fruit aromas is accompanied by a slightly lemony finish.

Champ Divin 2008 'Cuvee Pollux ' (Chardonnay / Savagnin)
An effusive nose of resin, green branches and lime resonates against a broad palate, balanced with well-integrated flora and salty nut notes. This bone dry, oxidative wine is like a mild vin jaune.

Champ Divin 2010 Pinot Noir
Elegant, upstanding and beautifully structured fresh feel in the mouth. An explosion of ripe plum and cherry flavors, with a hint of licorice.
